season some chicken breast or some shrimp ... this is optional eh :)

chop up some of your fav veggies... carrots, cauli, broco, sweet pep, chisto... no competition eh :?

1/2 can pasta sauce... any kind you fancy.

1 pack pasta ..... any type you like..... cook to the directions on the pack and drain.

2 thsp cooking oil
1 onion chop up
4 - 5 cloves garlic grind up :D
1 1' piece ginger chop up (optional)
salt to taste

heat the oil in a nice size pot....... not to spill over when cooking.

add ginger, onion and garlic... ... and brown up :)

add the Meat, shrimp and fry up

Add the veggies cook for five minutes.

Add the COOKED pasta and THE PASTA SAUCE and mix well........adjust salt to taste.

enjoy with some greens on the side. :D

Easy Macaroni Pie ... just for Seren.........

1 small pack macaroni..............cooked to directions on pack

1 can carnation evaporated milk
4 eggs well beaten
1 lb grated cheese.... save 1/2 cup for the topping.
4 thsp butter
1 cup grind up crix :D ......save a handful for the topping
2 dashes black pepper

set oven to 350 degrees

Grease 1 10' x 13' baking dish


In a large basin :D mix together COOKed Macaroni, eggs, butter, black pepper, cheese, crix and milk.

Pour into baking dish

top with extra crix and cheese....

and bake for 25 - 30 mins ...... or until it starts to get brown on top .

Note: I did not mention salt here because you would boil the macaroni in salt water and the cheese already have too much salt.....rite?! :)

Penne Pasta & Broccoli Rabe

* 1/2 cup olive oil
* 4 large cloves garlic, minced
* 2 pounds broccoli rabe( rapini) , cleaned, tough stems discarded, cut into 2-inch pieces
* Salt and pepper to taste
* 2 tablespoons balsamic vinegar
* 1 pound penne rigata
* Crushed red pepper
* Freshly grated Parmesan cheese

Heat a large sauté pan over medium heat. Add the olive oil and heat. Add the garlic and sauté for one minute. Add the rapini and a little water for moisture. Sprinkle with salt and pepper to taste. Cover pan and cook for about 5 minutes. Add the balsamic vinegar. Cover and continue to cook until stems are tender, about 15 minutes, adding more moisture if needed.

Meanwhile, cook pasta according to package directions for al dente. When sauce is done, drain most of the water from the pasta, reserving just a little for sauce. Add the sauce and the optional crushed red pepper; toss well to combine. Serve immediately, passing the cheese separately.

Roasted Veggies & Bowtie Pasta (farfalle)

Roast in Oven : skin of veggies must be somewhat charred
(one of each vegetable)
Small cubes of Eggplant
Whole Red Pepper
Whole Green Pepper
Cubed Zucchini
Red or White Onion
Garlic Cloves
Sliced Portabello or White Mushrooms

____________________________________________
1 pack bowtie pasta
1 cup grated Pecorino Romano Cheese (fresh is best ) but Bottled stuff can be used as a LAST resort.
3tbs Olive oil
salt & pepper




remove from oven remove charred skin from veggies (some charring can stay on )
Cube all vegetable

Boil 1 box/pack Bowtie Pasta per directions..drain



In a large Saute pan ...heat 3tbs olive oil ,and fresh garlic & roasted vegetables ...add cooked pasta, mix pasta and vegetables then add Romano cheese as well as salt and black pepper to taste .....

this one is really simple and I make it fairly often in the summer ...

1 Box Penne pasta (cooked)
1 large red Onion (sliced thin)
2Tbs Olive Oil
Salt & Pepper
Garlic (chopped really fine)
3 Large beef steak tomato (sliced medium)
Fresh Basil (10 Leaves chopped)
1.5 Lbs Fresh Mozzarella (cubed small)

simple and yummy

Boil Pasta and toss the above ingredients while Pasta is warm not HOT let sit for 20 mins ...

serve with side mesclun salad & italian bread with balsamic and Oil ....

How to roast veges in oven? Just put them in and wait for it to burnish?
U going to tell me how to make the mesclun salad too please?

Serenity just put veggies in a baking tray at 450 in oven untill u see skin charing ...

I usually just buy my Mesclun greens in farmers market or grocery store ...sometimes I'll mix it with Romaine lettuce but with that Pasta i dont mix it at all its really good with balsamic and oil ....

yuh not easy nah! :lol: as for the eggs in macaroni pie............you don't have to put any when yuh fasting :) just increase the milk by 1/2 cup

..............an mesclun is mixed greens like baby spinach, endive, radichio (spelling), endive, fennel, lettuce, etc.

Oho, I thought it was one bush.
I think I'll just chop up some regular type lettuce and solve that problem yes!
