Just wanted to share a lil dessert for those with a sweet tooth...
Krispy Treats

3tbsp butter (Im lactose intolerant so I use soya spread which works just as good as regular cows butter)
10 oz Marshmallows
1 cup crushed ginger snaps or any kind of biscuits you got on hand
1 tsp vanilla essence
5 cups rice krispies or crushed corn flakes

Method:
1. Melt butter over low heat
2. Add mallows and melt, stirring continuously
3. Add v. essence
4. Add cereal & biscuits.
5. Stir well
6. Empty into a shallow baking tray and allow to cool before cutting.
7. Enjoy...easy ent!?

Easy Chocolate Fudge

1 (12-ounce) package or 2 cups Semi-Sweet Chocolate chips
1 can Condensed Milk
1 cup chopped nuts ....pecans or walnuts
1 teaspoon vanilla

Line an 8 or 9-inch square baking pan with heavy foil.
Combine chocolate chips and sweetened condensed milk in a saucepan.
Warm over very low heat, stirring until smooth.
Remove from heat.
add nuts and vanilla ........... mix well
Spread evenly into prepared baking pan.
Refrigerate for 2 hours or until firm.
Turn over on cutting board..... remove foil. Cut into squares.

1 or 2 Espresso Shots
2/3 scoops Icecream

Put two scoops ice cream (or if you ah greedy monkey put 3) in the bowl then pour the espresso shot over the ice cream.....YOMMY!!!! :lol:

Magic Cookie Bars aka 7 Layer Bars aka Hello Dolly Bars ...


Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup (1 stick) butter or margarine, melted
1 (14-ounce) can EAGLE BRANDŽ Sweetened Condensed Milk (NOT evaporated milk)
2 cups (12 ounces) semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped nuts

Instructions
Preheat oven to 350°F (325°F for glass dish). In small bowl, combine graham cracker crumbs and butter; mix well. Press crumb mixture firmly on bottom of 13X9-inch baking pan.
Pour EAGLE BRANDŽ evenly over crumb mixture. Layer evenly with remaining ingredients; press down firmly with fork.
Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store leftovers covered at room temperature.

Dairy Free Chocolate Mousse

185 g dairy free chocolate (or any kinda chocolate you like)
3 eggs
110 g icing sugar
1.5 tbsp rum
40 mls strong coffee
150mls extra virgin olive oil (or melted soya butter)

Can do either by hand for mixing or electric mixer works best.

Melt the chocolate in a heatproof bowl over a pan of simmering water until smooth; cool.
Beat the egg yolks and sifted icing sugar in a small bowl until smooth.
Whisk in the liqueur, coffee, chocolate, then oil.
Beat the eggwhites in a small bowl until soft peaks form.
Fold egg whites into the chocolate mixture in two batches.
Spoon the mixture into eight serving glasses then cover and refrigerate until set.
Serve topped with your favourite berries etc.

2 Half Ripe Mangoes - any kind
1/2 cup Sugar - any kind
1 teaspoon Vanilla Extract
1/4 teaspoon freshly finely chopped ginger
1/2 gallon milk - any kind

Process;
In a blender or Cuisinart, place all ingredients and blend thoroughly. Add ice cubes and blend on high for about 30 seconds. pour into chilled glasses and serve. Quick, easy, and refreshingly delicious.

I was told that meringues are easy to do. So I tried last night. And my egg whites were just frothy.....I got the firm peaks as mentioned by the recipe, but it said that the mixture would be shiny but mine was dull and frothy.

So I gave up ...I didnt even bake the thing! steups...

Has anyone done meringues before?? I followed the instructions to a T....but I failed! :(

Any advice is greatly appreciated...thanks :)

Jenny, as far as meringues go, you beat/whip them until white with stiff peaks. I saw a new way of doing it the other day, you add the sugar before whipping rather than after. Also try making figure 8's with your hand mixer or if you have one that does it for you, it should work.

well i just bought a new mixer....I usually use my food processor with the mixing blade attachment...so I blamed the machine and got a new hand mixer. The mixer got good reviews so Im picking it up after work.

Typical me...blame the machine not the user! Thanks for the figure 8 tip though!
