So what's cooking in the Trini kitchen come this American thanksgiving?

Eggless, Dairy-Free Cornbread
Combine
1 1/4 cups soymilk
1 tablespoon white vinegar
1 teaspoon white vinegar
Let stand while you mix the dry ingredients
1 cup cornmeal
1 cup natural unbleached white flour
2 tablespoons sugar
1/2 teaspoon salt
1 tablespoon baking powder
3/4 teaspoon baking soda
Preheat oven to 375.
Pour the soymilk mixture into the dry ingredients. Mix quickly, and don't overmix.
Pour into the prepared pan. Bake for 25-30 minutes.
Done when toothpick is inserted in center comes out clean. Cool, then cut.

Cranberry apple sauce
1 (12 ounce) fresh cranberries, cleaned
1 cup water
1 3/4 cups sugar
1 apple, peeled, cored and chopped
1 fresh orange - grate the rind / zest and squeeze off the juice
1 lemon - do same as for orange
Cook cranberries, sugar and 1 cup of water in a pot over low heat for about 5 minutes or until the skins pop open.
Add the chopped apple, zests, and juices and cook for 15 more minutes.
Remove from heat and let cool.
Store in refrigerator for 24 hours before serving. It will thicken and gel as it sits.

I seeing this sweet potato gratin and sweet potato shepards pie on food tv. It looking real good so I'll try it. Turkey meat is going into a brine solution again. Loved it last year. I'll post the recipies when I finally decide whats cooking for sure :D .

Time to resurreck this tred.
Thanksgiving is Nov 28. Wha all you making. Is the one time of the year I does insist on no curry or creole food. This year I celebrating at home and I have to put my menu together. So far I know I making turkey :lol: but I have to plan the side dishes. Any suggestions. Please add to my list below.
hors d'oeuvres, etc
Hot Apple Cider with rum
Spread of different cheese and grapes
premiere florentine mini quiche
ultimate loraine mini quiche

Whaaaattttttttt! Glad you in the spirit! Meh basement is still ah mess, I can't see an end to all that construction going on down there.... dust, dust everywhere :roll: This is my daughter's last thanksgiving at home before going off to college ( it MUST be extra special for her although SB said she will be back and back and back :lol: ). Menu as usual NO CURRIES , visit the markets, make meh purchases, come home and throw down ah feast, nice crackling fire, good company, great music, some games...........same ole, same ole............

In my family we celebrate Thanksgiving and we are in "American soil" (well yes, is Trinidad in Europe?) :lol: I was just checking the prices of turkey the other day and I thought geez, I think I can make a chicken taste like turkey with that price! :lol:
Apple pie will be in my menu for sure.
By the way, thanksgiving is on the 27th not on the 28th.

You know I was wondering why Trinis would be cooking a TG menu...
Anyway, when I lived in the states, the TG menu was: roasted cornish hens, glazed grilled vegetables, potato gratin or mashed potatoes, garlic toast and maybe a green been casserole or some other side.
Desert was either my mother's black cake or some sort of jam tart pastry.
We didn't go the traditional route apparently lol
But one year my friend did do the traditional turkey, stuffing, cranberry sauce and pumkin pie.

Hey Chica, I make apple pie all the time with good results. Serve hot with vanilla ice cream. Sure to please. :lol:
Easy Apple pie
3 lbs. green tart apples
2 thsp lemon or lime juice
1 cup brown sugar
2 thsp flour
2 thsps butter
1 tsp cinnamon powder
1 tsp vanilla essence
1/4 cup sour cream ( optional :lol: )
Pastry / Crust / Dough
2 1/4 cups flour
1/4 tsp salt
3/4 cup CHILLED vegetable shortening
5-6 thsp COLD ICE WATER
Combine the flour and salt.
Add shortening and mix well until it resembles fine bread crumbs.
Sprinkle 5 thsps ice water over mixture and gather together to form a ball. Add 1 more thsp water if dough is to dry.
Divide the dough into two (2) parts, round each, wrap in plastic wrap and refrigerate for 1/2 hour before use.
Heat oven to 400 degrees.
Peel apples , core and slice thinly .
Mix in lemon juice and other ingredients except butter and sour cream.
Roll out second half of dough and line a 9" pie plate.
Arrange apples into prepared pie crust.
Dot with butter ( and sour cream ) on top of apples.
Thinly roll out second dough and cover the top of pie.
Trim of edges and pinch both top and bottom together to and seam.
Cut a slit on top to let steam out.
Brush with very little milk ( optional ) and bake for 40 - 50 minutes.

Why dont you just admit that your "curry mout" will not allow you to taste the pleasures of curry goat paired with mashed potatoes....and it is irrelevant where and how I get the curry goat and mashed potatoes.

Getting back on track here, my final version of thanksgivng menu. I only have to get a recipe for the turkey. But I not worried about it. My default recipe is to marinate for a couple days with a set of galic, pepper, onions, and anything else I find in my fridge.

Salt.........Wash and season the turkey like you would season chicken when baking whole. Only difference is rub butter ( and seasonings ) under the skin as far as you could reach from the neck and cavity areas and some butter on the top. That will help to keep it moist. If you could find a marinade injector, that will help to get the flavours into the meat. Personally, for me - seasoning for days is bull crap! The day or night ahead is just sufficient. Bake covered for two hours then remove cover and continue to bake / brown for 1/2 hour, at 420 degrees ( that's 2 1/2 hours ) or until the internal temperature reaches 180 degrees when tested with a food thermometer. No need to over cook. Good luck! :)

Yuh know I does make a nice apple schudle! I does do the same apple pie recipe, add pecans, raisins, dried cranberries and fresh ginger, mix everything together, roll out the entire recipe dough thin, then wrap up the apple filling, tuck in the edges underside, cut three slits on dough and bake for 40 - 50 mins.......yum!

After you stuff the turkey, lather it well with Mayonaise ... yes, mayo, all over and use plenty too, then bake until temp reaches 180F-190F. Or, you could deepfry it too. Either way, it tastes great. The mayo one does be jucier doh.

I usually make my own mayo and add a dash of this and a dash of that - whatever hits my fancy at the time, like cayanne pepper and finely chopped garlic, but you can use Kraft or Hellmans instead. The mayo does add flavor and keeps the turkey nice and moist and juicy. Use whatever stuffing you want.
If yuh put cayanne pepper, save some ah de mayo tuh rub dong yuh husban'. He go bawl wit delight and be flyin rell high - in orbit. Ah bet he go never fugget de experience. :D :D :D

Yuh is a boss cook rite dey :D ! I have a Russian friend who does rub down, turkey, fish and duck with mayo before baking and add some onion slices on the top to add extra flavour. ........So yuh boi didn't invent that mayo thing eh :lol: ( watch pong coming :lol: )

I don't know about seasoning overnight since I've never done it. Sounds okay though. You could try it and let us know how it turned out.

After planning my menu down to the details, pairing each item to complement the other, the curry mout people in my guest list just cyah help deyself. One of them want pepper sauce, another one bringing jerk chicken. I had to give them a big bouf and tell them to leave they curry mout at home yes. Again, i had to reinforce the idea of eating traditional thanksgiving food for thanksgiving. No curry, no pepper sauce, no jerk, no pelea, no short pants and no slippers.
Saps gyal, it real hard to put some culture in these people. I wouldn't be surprise if dey ask for fry channa for hor doves.

So we're having dinner at our cousins' tomorrow rite.......so I answered the phone last nite, my cousin giving me a message tuh give meh husband " that he went to the halal meat shop and pick up de goat and chicken and that he (my husband ) and my brother would have to come by early tonight to wash and season.........." Talk about sabotage ?! :roll: When dem three men get together all hell does break loose yes! Then dey go ask meh tuh cook roti fuh dem too :roll: Aye.... you know any body who want three men fuh free? :lol:

Anyway, I marinated my turkey just now. I blended galic, pepper, cilantro, parsley, thyme, scallion in olive oil and canola oil. I put on my gloves and I well rub down the turkey. I follow your advise and I push my hand all under the skin until it buss up. Gyal Saps why you didnt tell me that the skin go buss. Anyway, I patch it up with the blended seasoning and I cover it with plastic wrap. Tomorrow I covering that with "cheap" (Hellmans) mayo and baking.

I dont know why all you concluding I was rough. I used surgical gloves and I gently and lovingly rubbed the bird down. It was more like a caress, fuss I was gentle. Then I gently put my fingers under the skin using the marinade to lubricate. But the skin on the thigh was not opening up so continuing to use my fingers I applied gentle pressure and the daiz when the ting buss open.

Here's another method for baking that turkey ... not yuh husban eh. After you stuff the turkey, lather it well with Mayonaise ... yes, mayo, all over and use plenty too, then bake until temp reaches 180F-190F. Or, you could deepfry it too. Either way, it tastes great. The mayo one does be jucier doh.
Now that I actually doing this, what you mean to bake until temp reach 180F-190F. Set the oven at that temp or the turkey should reach that temp. Should I cover the turkey with foil for first couple hours. Should I be basting the turkey with mayo while baking.

Guy the turkey was fabulous. It was moist, tender and spicy. Thank you for the "mayo" idea. People had to loose their belts, fuss they enjoyed it. My only set back was my curry mout brother who thought the creamed corn was dhal.

I'm delighted to hear that the results were fabulous. Did you put butter with the mayo too? I used only the mayo. I didn't feel like experimenting with the buttet.

2. How much garlic you use ... 1 head used with seasoning to marinate and 1 head used the next day for fresh batch of seasoning
3. How much and what kind of pepper ... 1 pepper used with 1st set of marinade and a next one for the 2nd batch
4. How much Cilantro, Parsley, Thyme, Scallion, Olive & Canola Oils ...about 6-7 sprigs each and 3 scallions each time. Approx 3-4 tbs of each oil. I added about 4tbs of water in 2nd batch
5. How long did you let the blended ingredients sit before using on the Turkey ...while the turkey was baking 5 hrs
6. How much Mayo in total ... just 1 spoonful ... and which seasoning did you mix it with? about 6 tbs of mayo. Lather until it is totally covered. Put all under the skin. 1tbs of mayo with about 1/4 cup seasoning for basting.

Did you cook a Ham too? If so, let's know what you did and how it came out. I had a ham but I delegate the cooking to someone else. But it was a sprial cut ham covered with cloves and pineapple slices. Ham is delicious like this

I covered the turkey with foil for the first 4 1/2 hrs. I took out only twice to baste. I also used some of its juices to baste and then the seasoning mix. Last 1/2 hr was for color.
Also, I added salt to the blended seasoning in addition to rubbing down the turkey with some salt before laying on the marinade. i think marinating overnight gives time for the flavors to penetrate the meat and add flavor. No butter was needed because the mayo is full of oil. And you were right. It acts as a great moisturizing agent and it complimented the combination of seasoning used. I did not use any stuffing except I smashed a head of garlic and put on the inside together with a few sprigs of thyme as an afterthought.

Ours turned out fabulous too. I used the butter as usual, added the mayo thanks Guy , well rub it down inside out and under skin too, I went a bit further and added Dijon mustard and those who eat it had to remove dey belts too. Saltwater yuh have graduated from sou chef tuh Pro gyul :D
