In many other Caribbean islands they been having their Mango Festival and on 15th August 2009 T&T wud be having one.

Inter-American Institue for Co orporation for Agriculture(IICA) #20 Austin Street, St Augustine.

1st mango festival in T&T.

FAO sent out a challenge and the women accepted.

Somebody,anybody.....name mangoes that are good for chow....or give a good chow recipe....

Here is a great mango recipe you may want to try during 'the festival'......

MANGO MOUSSE

INGREDIENTS:
1 TIN MANGO PULP
1 TIN CONDENSED MILK
1 CONTAINER COOL WHIP
2 1/2 TEA SPOONS OF GELATIN or 2 pkts of Knox Gelatin
1/2 CUP OF BOILING WATER
VANILLA

DISSOLVE THE GELATIN IN BOILING WATER AND KEEP IT ASIDE.
BEAT THE MANGO PULP, CONDENSED MILK AND COOL WHIP WITH AN ELECTRIC BEATER. ONCE IT IS BEATEN WELL, KEEP ADDING THE GELATIN AND CONTINUE TO MIX. ADD 1 TEA SPOON FULL OF VANILLA.
POUR IT IN A SERVING CONTAINER AND REFRIGERATE.
ONCE IT IS SET, GARNISH WITH MANGO SLICES AND/OR CHERRIES.

Cherries with mint leaves make an awesome presentation

Julie mangoes have been called the queen of mangoes. None come near the sweetness of a juicy Julie. But mango is not Julie alone. There are a reported 64 types of mangoes in T&T and some of the names roll easily off the lips, mango rose, mango vere , calabash, dou doux, starch, zabico, and graham. Hog mango or Long Mango are the best for chow. Here's the recipe:
1. Mangoes
2. I/2 Onion
3. 4-6 cloves of garlic
4. 1/2 lime
5. 4-6 Congo peppers
6. Salt
7. Cilantro or Bhandania

Method
Slice Mangoes into bite-sized pieces
Finely chop Peppers, Garlic, Onion, Cilantro/Bhandania
Combine all ingredients with mango in a large bowl
Add salt to taste
Add juice of 1/2 Lime/lemon
If Mango Chow is too hot, add lime juice to decrease hotness
Set aside mango chow for one hour to marinate then lick it op ... :D :D :D
