Hi, I am looking for SIMPLE and HEALTHY vegetarian dishes, please post your favorites, thanks. :)

dice some aubergines into 1cm cubes. Dice some carrots into 1cm cubes. Dice some potatoes into 2cm cubes. Cut an onion lengthwise then half that and separate the layers. Put in some whole unpeeled garlic. Toss in olive oil and sprinkle some all-spice, salt, black pepper, dried chilli flakes, thyme and whatever else you think may fit in. If you have soemthing called Caribbean All Purpose seasoning then that's the ticket!!

roast in an oven about 180-200 C for about two and a half hours or so, or until the veggies are cooked.

squeeze the garlics out their peel, and discard the peels. Paste the roasted garlic across the veg.

Does anyone know if it's possible to make eggplant parmigiana without frying first the eggplant? :? I am trying to cook/eat non-fried foods, could I use a little butter instead?

the problem with the frying is the saturated fat, no? So then butter will not be an option.

By the way chica, there is a place in hell reserved for people who dont use butter in their kitchen and substitute revolting margarine for everything but thats another story for another day.

Why can't you fry in canola or olive?

Look, just use the butter and get a good taste and done......everything in moderation not if you eat something once in a while youll keel ovah! :mrgreen:

Falcon gave you a good start but eliminate the salt. They say that salt is unhealthy for you. Additionally, add about 10 heads of garlic - they say that garlic is very healthy for you. Moreover, garlic is also a protective vegetable - no one will come close to you for days! As for the pepper, substitute Congo Pepper instead. The capsicum in Congo Pepper releases endorphins and you will get a "high" while the chemical works as a blood thinner, thus, eliminating the possibility of blood clots and getting a stroke.

Thanks Guy, I LOVE garlic and I cook with LOTS of it.

Falcs, :lol: I DO use butter to cook but only a bit, the reason I ask is because the eggplant if you fry it needs way too much oil so I was looking for an alternative.

Veggie Burger

3 1/2 cups rice cooked
1/2 cup onion, diced finely
2/3 cup carrot, minced
1/2 teaspoon dried basil
1/4 cup soy sauce
2-3 cloves garlic, minced
1/2 teaspoon dried thyme
1/2 teaspoon black pepper, ground coarsely

In ah big enough bowl add all de ingredients, mixing well.
Knead the mixture and form into patties about 8-10 cm round and about 2cm thick.
Bake in ah oven preheated at 180°C for bout 25 minutes, fliping once.
Yuh could also do dis over medium heat in a frying pan coated with olive oil.

Note: eef de mixture is too wet or too thin, the patties will not hold.

EGGPLANT PARMESAN without frying the eggplant

INGREDIENTS

2 large eggplants, sliced into 1/4 to 1/2 inch slices
Olive oil
3 tablespoons dried oregano
Salt and pepper to taste
1 pound fresh or canned tomatoes, chopped
4 large cloves garlic, minced
4 ounces mozzarella cheese, grated
1/4 cup freshly grated Parmesan cheese

Brush the eggplant slices with olive oil. Sprinkle with some of the oregano, salt and pepper to taste. Place on baking sheet in single layers and place about 6 inches under hot broiler. Broil on one side until browned and tender. (If the eggplants gets too brown before getting tender, flip the slices to brown the other side. However, browning of both sides is not necessary.) Brown the remaining slices in the same manner.

When the eggplant is done, preheat oven to 400° F. Lightly grease a 13x9x2-inch casserole dish with olive oil or olive oil spray. Spread just enough of the tomatoes in the bottom to cover lightly (this will prevent the bottom layer of eggplant from burning). Add a single layer of the eggplant slices. Top with a light layer of tomatoes. Sprinkle with some of the minced garlic and a little more oregano. Top with some of the mozzarella and Parmesan cheeses. Continue the process, ending with Parmesan cheese on top. (Each layer of tomatoes should be sprinkled with a little salt and pepper, unless you are using canned tomatoes with salt.) Cover with foil and bake for about 30 minutes or until hot and bubbly. Uncover and bake an additional 5 minutes if more browning is desired. Serve immediately or let cool to room temperature.

You can also brown the eggplants on a grill or in a grill pan.

never add flour! use dry grated bread crumbs
