Does anyone know any good recipes besides ackee and saltfiss, saltfish accra?? I love saltfish but kind of getting tired of those 2 recipes.

last week moms made some saltfish acra.....will try to find out the recipe....went down good with some mango chutney 8-)

Didi,i saw my grandmother made this many times and which i now do.Boil and shred saltfish add onion and pepper and chunkay with hot oil like chooka..... goes really good with dhal and rice.

Ginger, with some chopped tomatoes, they call that Buljol! Goes great with Bake!

Buljol

1/2 lg saltfish
1 medium onion finely chopped
2 medium tomatoes, peeled seed and chopped
1 fresh hot pepper, seeded and chopped
freshly ground black pepper
3 tbsp olive oil
2 tbsp lime juice
lettuce leaves in bite size pieces
1 medium zaboca, diced

place fish in boiling water and allow to cool. Squeeze water out. Skin, debone and shred
Mix fish, tomatoes, hot pepper and onions well. Season with black pepper, oil and lime juice.
Toss with zaboca and lettuce.
Serve!

Saltfish and (fry)tomatoes goes down good with fry bake or roti. I prefer it with bake though.
For the recipe I'm not to sure without checking with mum :mrgreen: :oops: I've listed the ingredients as I recall, perhaps someone can correct me and give quantities & correct method.

some ripe tomatoes, chopped
saltfish, prepared (as in soaked/boiled), squeeze out excess water
chopped onions
garlic
hot pepper
lime juice
bhandhania
salt & black pepper
1-2 tbsp oil

Fry the salt fish for a few mins to brown it and take it out and put aside then add the tomatoes, onions, garlic, (pepper salt, black pepper, and bhandhania according to taste). When the tomatoes are soften add back the saltfish and give it a few more minutes. The lime juice is optional, but can give it a nice twist and take away any freshness of the saltfish.

I forgot to add, I've had saltfish & tomatoes with dumplins and also with provisions (boiled and tossed in a little hot oil with onions {optional I guess}).

I've come to publicly denounce all u ppl who took part in this discussion and never once mentioned how HORRIBLE saltfish smells (not the forumite, the actual ingredient).

I have never cooked it before and decided to try it for breakfast this morning. The entire house is STINKING!!!!!!!!!!!!

Is there something that could be done about the nauseating smell? Should I have added a couple limes whiles it was boiling? Or is it one of those things u have to grin and bear?

look, just get some that looks thick, evenly salted and smells ok if it's out the pack. Get some good quality Canadian Cod, not that Bajan stuff they sell in cellophane.

THIS IS NOT HOW WE MAKE OILDOWN... OILDOWN IS NEVER STIRRED but rather packed.. The people have been robbed of the experience of a true grenadian dish... I dont think any Grenadian will eat this if served as Oildown...This dish is for the guests who dont know any better.

Any made from good old 'Canadian Cod'..... it is the best in the world :D ....forget bout dat Bajan saltfish....too boney.

Oh, and on Saltfish Recipes...one that comes to mind is one my mother made for us when we were children.......Scrambled eggs with saltfish (just like you would do ham and eggs)....haven't had that since we left T&T....doh know why :roll:

Guess we were poor? (yes, there was a time when saltfish was actually cheap in T&T)......anyway, either dat or we didn't develop our discriminating taste yet :lol:

Wha Falcom say about thickness. I think it is cod, whitish in color, and very expensive. Soak in water for a couple hours, rinse a couple times. You rinsing out some of that scent. Cook after.
PS I really dont know why people like it so much, but saltfish does taste like crap.

Recently we have been shopping in one of the major supermarkets in West Sussex, they have a Caribbean section, which includes Salted Fish Skinless and Boneless, initially it tasted great, but recently have discovered the taste to be waning, as it was in no way comparable to the taste we get in Trinidad & Tobago. Honey, thanks for the recipe, we shall try it.

The Gary Rhodes programme on Caribbean cooking was an asset to the household, because of the simplicity imposed, especially when cooking salted fish with coconut milk.

Prior to the Gary Rhodes show, never associated oil down with Grenada, as a matter of fact, whenever I did, it was in connection with Guyuna

Prepare the salt fish by soaking 8 hours/overnight boil and flake (skin and bone if necessariy)then use in recipes. We usually use cod saltfish. I have seen saithe saltfish and ling saltfish which is cheaper but it does not have the same taste.

For curry;
a tablespoon of oil
chopped onions
chopped garlic
chopped chilli
curry powder or your own personal curry mix

Mix curry powder with a litte water to make a paste. Fry onions, add garlic and chillis, stir then add the paste. Add salt cod flakes and water. You may not need to add salt due to the salt fish.

For Salfish and bhagi
bhagi/spinach or whatever dark green edible leaves you have available
coconut cream (fresh/concentrated/dried/tinned, add a little water if needed)
onion
a tablespoon of oil
a hot pepper/chilli

sauté onion and chilli add bhagi and coconut cream. Simmer when sauce thickens and the bhagis has wilted it is ready to eat. This cooks very quickly

Lawd Fal, yuh din have to do that, all yuh had to do was crush it up, add sone finely chooped saltfish, garlic, onion a lil sat and pepper to taste. Mix it well and deep fry it like you would pulhorie. Man that ting does lash!

Spanish people make something called Bolinhos- basically croquets. it can be made with chicken or saltfish..i think they use cassava flour to bind it..
