Does anyone know how to make that whitish garlic sauce they serve with Bar-bQ n fries..lookin for the name and recipe thanks! :geek:
Yes, it's delicious.
A few cloves of garlic, a little bit of vinegar or lime juice, and mayonnaise. A little black pepper, and whichever other seasonings you want. I usually add some cayenne pepper and basil.
Put it in a blender. I use my Magic Bullet.
Doh ask for measurements...it's an easy one to play by eye. Most important varying measurement is the garlic...it's easy to put too much or too little depending on your tastes. Better you put too few (like 4) and then add more if you want more garlic taste.
Also, you don't need to use garlic itself. You can use Maggi garlic & onion cubes, or bottled diced garlic.

GARLIC MAYONNAISE
1 egg, at room temperature
2 egg yolks, at room temperature
1 1/2 c. salad oil
2 tbsp. lemon juice or wine vinegar
1 tsp. dry mustard
Dash of salt
Dash of cayenne pepper
3 to 4 garlic cloves, crushed
1/4 c. chopped parsley
2 tbsp. chopped fresh tarragon
Place egg, egg yolks, 1/4 cup oil, lemon juice, dry mustard and salt in blender or food processor. Turn on to medium speed. After a minute, begin pouring remaining oil in a thin stream into the top of the blender.
About halfway through the pouring process, or if oil begins to accumulate on the top, stop blender and stir mayonnaise with long-handled spoon. After adding all of the oil, add more lemon juice to taste. Stir in cayenne pepper, garlic, parsley and tarragon. Allow to stand covered in refrigerator for an hour or more so flavors will blend. Makes 2 cups.
Oh yeah...forgot the mustard.

I love this sauce! I tried to make it a couple of times but I think I put too much garlic.

Garlic Aoli
Garlic cloves (about 6)
Olive oil (about 2 glugs)
Mayo (about 2 tablespoons)
Salt (to taste)
Pepper (to taste)
Juice of one lemon
Combine all and blend.
