Can't suggest anything cause I tried with soya cream but it doesnt thicken well at all! Mine looked like split milk with the heat.....yuck!

* 10 ounces fettuccine pasta
* 1/2 cup butter
* 6 cloves garlic, chopped
* 1 cup heavy cream
* 1 egg yolk
* 2 cups freshly grated Parmesan cheese
* 2 tablespoons dried parsley
* 1 tbs red pepper flakes
* 1/2 Cup diced tomato
* 1/4 cup chopped onions
Black Pepper to taste
Note : Only use fresh parmesan cheese the ones in can won't work.

DIRECTIONS

1. Bring a large pot of lightly salted water to a boil. Add fettucine pasta and cook for 8 to 10 minutes or until al dente; drain.
2. In a large skillet melt the butter and add the chopped garlic,onions,tomato & pepper flakes. Cook on low for about 5 minutes, stirring often, making sure not to burn .
3. Pour about a 1/4 cup of the heavy cream into a small bowl. Add the egg yolk and beat together; put aside. Pour the remaining cream into the frying pan. Increase the heat to medium-high. As the cream starts to boil, mix rapidly using a whisk. Slowly add the cream/egg mixture. You do not want the egg to curdle. Continue whisking until well blended.
4. Add 1 cup of the Parmesan cheese and continue to mix the cream. Pour in the remaining Parmesan and the parsley, mix until smooth. Immediately remove from stove. Serve over cooked pasta.

maybe you can substitute the canned cheese for the 'trini style' part :lol:

this sounds about right though....
great with grilled chicken or shrimp

Expensive dish to make here, specially for the Parmesan cheese and the heavy cream but nobody can deny is delicious.

i do all that...but i usually add the pasta back to the sauce in the pot and stir it well just at the end of the cooking of the sauce...serve hot...cold fettuccini is nasty IMO...and i dont add the cheese in the sauce...i sprinkle on top after...same difference i guess...

I do the same except I add my shrimp to the mixture as well, then just sprinkle extra parmesan cheese on top of each serving.

Stop tempting the poor souls in Trini who cannot afford either shrimps or parmesan cheese. :cry: :lol:

Look, I would pay good money to be able to buy the nice fresh shrimp that you get in T&T, honestly, by the time we get it here, it has been in so much ice, it looses all it's flavour...... either that or they cultivate it in ah tank :roll:
