is good weather dis weekend so ah gone up de bush again, de sun shining buh is bout 4°C.
ah decide tuh make ah grill again, so ah season ah pice ah pork and put it away fuh 4 days, den ah cut ah banana leaf and season dat wid ah simple 7565vinegrette

den ah rest de meat on de leaf and seaon de top wid de rest ah de vinegrette7566

den ah loosely wrap im up7567

de whole ting in aluminum foil tuh finish de wrapping7568

ah ah in de camp now getting de fire going7569, here ah using wallnut wood

when de coals are ready put de wrapped foil packet on de coals7570

after ah hour is bout ready7571

back on de grill tuh keep warm while de tortillas gehing finished7576

time tuh plate up- de crust!!!!7577, tender and juicy also

now fuh de test wid freshmade bbq sauce and fresh salad 7579

7581 an enjoy de rest ah de night....it is now -1°C- real cold, time tuh pack up an begin de walk back tuh de village and home.

ah doh tink dat de weather will be as nice as last night dis year again

You will have to expand on "ah season up ah piece ah pork"

is ah powdered dry rub dat ah made wid paprika, chilli, brown sugar, rosemary, salt, pepper, coriander, onions and garlic.
wrap well in cling-foil and refridgerate fuh 3-4 days

I like this post ....my kind of cooking.

I will try the same method using a Grill and a smoke box with mango wood.

Is this kine of grilling a 'guy' thing..anyway next yr summer i going to try it out Shaddeck (pls note spelling) style but I will add some pepper..
