Its just normal pholourie mix, but I add some cayenne pepper and some fresh herbs I have at hand...gives a nice twist ...eg if im having it with a tomato dip I would use basil in the mix, if Im using guacamole dip, I would add some thyme and chives in the pholourie mix.... :)

I use frozen berries sometimes, if I don't have any fresh ones in the house. They work just as good.

6 Granny Smith Apples
1 tablespoon Lemon Juice
2 tablespoons Caster Sugar
½ cup Blueberry, ½ cup Raspberry or any berries you have...
½ cup Brown Sugar
1 teaspoon Baking Powder
½ cup Rolled Oats
150g Plain Flour
100g Chilled And Diced Butter

a. heat oven to 200 degrees C
b. Peel, core and thinly slice apples.
c. Put apple, 2 tablespoons of water, lemon juice and castor sugar in a saucepan. Cover and cook over low-medium heat, stirring occasionally for about 10 minutes until soft. Empty this into a baking dish...pyrex is better than metal I think cause it easier to dish out after. If you like cinammon ...sprinkle a lil bit on the top of the apples.
d. Sprinkle the mixed berries over the apples, pushing some of them into the apples.
e. Place the brown sugar, baking powder, rolled oats and flour in a bowl and mix well. Use your fingers to rub the butter into the flour mix until it resembles rough breadcrumbs
f. Top the apples with the crumble mixture and bake in the oven for 20 minutes or until golden brown and bubbly, serve warm with ice-cream, hot custard.
It does go down realllll nice!

Thanks Jenny. That sounds something like my apply pie, but with berries in it. I LOVE apple pie. Sadly, sugar is now my enemy.

You can replace sugar with natural honey.....I use soya butter to replace butter ....I also use a bit of golden syrup with the honey.

6 egg yolks
1/2 cup fresh honey
3 cups soya milk
1.5 teaspoon good vanilla or if you have the pod use the seeds...that even nicer!

Boil the milk in a saucepan, then lower heat to a simmer. In a bowl, beat the egg yolks and the honey. Add to simmering milk, stirring constantly and do not allow eggs to over-heat cause you will end up cooking the yolks! (I did that once!) . Remove from heat after ingredients thicken, and strain. After the ingredients cool in bowl, add cream and vanilla. Freeze and enjoy...
It similar to making custard....

I use soya cream which is not too runny...ie it can coat the back of a spoon nicely. I guess you can use double cream which is dairy and can whip it a bit to thicken it...but not tooo think! It should not make peaks...

Isnt honey just as fattenning or even more so?

I checked...it can be ..

"Honey actually contains the same basic sugar units as table sugar. Both contain glucose and fructose. Granulated table sugar, or sucrose, has glucose and fructose hooked together, whereas in honey, fructose and glucose remain in individual units. Fructose is sweeter than glucose, which is one of the reasons fructose is used in so many food products today. However, fructose does not convert to energy as efficiently as glucose. As a result, processed foods containing granulated sugar high in fructose convert to fat stores more easily than honey.

Caloric content of honey differs from that of table sugar. One teaspoon of table sugar contains 16 calories, while one teaspoon of honey has 22 calories. While honey may have more calories, people may actually use less of it, since it is both sweeter and denser than table sugar. This being said, you actually may take in about the same amount of calories that you would with sugar or perhaps even less"
