Today I ate some nice creole food (I must admit I eat it only when I buy it outside because no matter what I do, I cannot get the real "Caribbean" flavor :drool:), and I was thinking whether I like Creole food more than I like Indian food and definetely Creole is number one! :love2:

So which one you rather and why?

We have mix up thing becos if yuh say curry is indian then how they curry the crab to eat with dumplin' in Tobago. lol

That's a bit silly now isn't it?

Well, I suppose the link gives a generalized or "popular" term. I think most people associate Indian food with curries (but yes, Indian cuisine is more than that).

i think it is a disgusting thread .. obviously made without any thought process .. maybe the author is ignorant of the Trini food and culture ...

what exactly is Indian food and what is Creole food …

this thread is opening up a can of worms that was left unattended many years ago..

I recall Zero Three and other Administrators having to ban members for using the term ‘creole’ .. now I am surprised that we are back to this separation .. why can’t we call it Trini food..
I am offended that we can use a separation of food to include Indian food and Creole food … I hope the author can explain… and the reason for the Poll.

Some people seem to use the term to describe Afro-Trinidadians (not sure why).

For me a creole is an European descendant born in Latin America or the West Indies (example: French Creole).

Technically, anyone who is not Amerindian and is born in the West Indies is a creole. It has nothing to do with race (there are white creoles and black creoles). For some strange reason, in Trinidad, the creole Indians are not called creole...

The official definition of 'Creole' is that of a European decendent born in the West Indies

HOWEVER in Trinidad in the olden days the term creole was used to describe someone of 'mixed race' ..... (other than the Indian/Afro mix who were labelled either by the dominant race...or as Douglas) ....so basically if your blood line was anything foreign and a local ..... you were considered or referred to as a 'creole'.

I had creole/Syrian friends; creole/Chinese friends; creole/French friends ...... and many. friends like me who had multiple bloodlines and were all simply referred to as 'creole.... in Trinidad.

I guess when the first Indians hit Trinidad, most of them knew no English and learnt as they went along, and hearing the mostly English or Scottish-born estate drivers refer to locals as creoles but not to Indians as creole (because then they were not), they misunderstood the term to be a racial one, and never realised that they were making creole children...

Poser, in my opinin as a reader and a participant on this thread, I took her use of creole to represent an adjective rather than the noun.
I cant remember us banning anone for saying creole. I was at the forefront in getting the n word and GuyGuy's c word discouraged. But never the word creole. Please refresh my memory if I am mistaken.

Nevertheless, if the term is offensive, we can discuss this among the members (maybe even on this thread) and get an idea if our interpretations of the word in this thread are representative of the wider forum.

i think it is very obvious that the author of this thread is speaking about her taste in FOOD, and we all know that she is not native to this country.

drawing references and parallels to people who were trying to use the forum to promote negativity and strife is quite ridiculous.

there is NO DOUBT in my mind that we are talking about types of food here: calaloo and stew chicken and macaroni pie and coucou and dhalpouri and curry goat and geera pork and dhal.

folks, can we continue to keep this discussion on track as it relates to FOOD?

if anyone feels gravely offended or 'disgusted' with regard to the subject matter of this thread, please register your concerns on the complaints board.

Zack it seems like you are living too long in Maryland......Americans are big in political correctness. In Trini, as you can see by this thread or in day to day conversation everyone knows what "Indian food" or "Creole" food is...seeing beyond that and finding distinctions on their meaning is trying to split hairs, not worth it if you ask me. :) I really don't wish to do that on this thread (it is not the purpose).

So maybe you can tell us whether you like a nice chicken roti or you rather stew chicken with macaroni pie. ;)

When dealing with certain subjects, one must be cognizant of the fact that there are many interpretations - genuine interpretations - so one must take extra care to be as specific as possible. For example, when you go to the grocery, do you ask for Flour or do you ask for a specific amount of Flour? See what I mean?

Among the many entertaining stories that Ramnarine tells relates to how "doubles" was born. As he recalls, he and his friend Harold Baldeo went to Mr Singh, the barra vendor who supplied them regularly with barra and channa. "One day, I asked Mr Singh to put the channa on the barra like an open sandwich instead of putting the channa in a paper cone.

Sometimes, the channa fell off the barra, so I asked Mr Singh to give us a double barra with the channa inside, like a closed sandwich. The channa was kept inside by the double barra. The following day Harold simply asked for two doubles, one for him and one for me.
So Mr Singh, the doubles vendor and Harold Baldeo were the people responsible for creating the first "doubles" and the locale was the Naparima College quadrangle.

"Little did Mr Singh and Harold realise that the doubles was going to become the most popular fast food item in the country. Both of these gentlemen are now deceased but they should be posthumously recognised for their great contribution to Trinidad and Tobago. "
Incidentally, I have seen what looks like a doubles in Mauritius. I did not taste it to make sure since I ate so many doubles at Naps that my stomach could no longer deal with them.

Mr Paray Ramnarine, my former history teacher at Naparima College in the 1950s has written an informative and entertaining little book about his stint as a master at Naparima College which many of his fellows and pupils in his history classes would find interesting and helpful in remembering their own college experiences.
So Mr Singh, the doubles vendor and Harold Baldeo were the people responsible for creating the first "doubles" and the locale was the Naparima College quadrangle. BTW: Harold Baldeo's brother, Albert, just passed away. His other brother, Gerry, is known as Gerry Bednob, the guy who played the old Indian man in "The 30 y/o Virgin."

or 'ah feeling for some inian food'

is more like 'you feel like some fry plantain and curry eddoes'

or ... 'leh we fry up that fish and trow it down with some pigeon peas and sada roti"


but you never know .. maybe things have changed and when you go by KFC and they ask you how you want the chicken .. you say 'the creole way please'

It's interesting that the posters who live abroad seem to be confused at the terminology that is so common in Trinidad and Tobago. Like I said, if anyone has an issue with the meaning of these words they can take their concern to the appropriate board. Having said that, I'm glad this thread is gathering so many replies. Seems to be the hottest thread. :)

Today I ate some nice creole food (I must admit I eat it only when I buy it outside because no matter what I do, I cannot get the real "Caribbean" flavor :drool:), and I was thinking whether I like Creole food more than I like Indian food and definetely Creole is number one! :love2:

So which one you rather and why?

My preference
Fish in Coconut Milk, Green Fish Curry, Chicken Chettinad made with ginger,coconut, cinnamon,
and cardamoms, Green Chicken Korma, Lamb Slow Cooked in Onions and Yoghurt Shank Korma,
blending Moghlal and Nawabi cuisunes. The Gujarati Mango and Yoghurt Curry is a tasty treat
for vegetarians or perfect for lunch or as a side dish, while Lamb with Plumbs the swetness of
fruit with spicy aromas of cinnamon and chilli is a treat.
Why?

In the world of the culinary arts there is a great deal of diversity that those that are charged with the multitudinous methodologies of preparations, who try to satisfy the gastronomic cravings of their participants, endeavour to become familiar with the sheer magnitude of such an undertaking, which is oftentimes mind-boggling since those people must be able to prepare a wide variety of dishes and to discern the subtlety of flavours that are imparted to the cooked entrée while being able to distinguish, without a second thought, the value that every spice or concoction known to man imparts to the dish(s) being prepared so that the end result is applauded by the consumer, but, these dishes are and have been generally named after a plethora of things, people, countries, races and even religion, and, this leads us to frequently become confused when describing certain dishes from certain parts of the globe such as the Caribbean, Europe, Asia, Middle East, North Pole, and even within these geographies, dishes vary within the region and even within the country though some may argue that dishes vary within villages and tribes within the same locale, as is the case with the island of Trinidad where there are dishes that have been influenced by foreign countries, such as Africa, India, China, the Middle East, Greece, and even so, we have the North Indian influence, the South Indian influence, the African influence, particularly Eastern Africa, the Lebanese influence, the Syrian influence, the Mandarin Chinese influence, the Cantonese Chinese influence, the Szchezuan Chinese influence that all are delectable when prepared properly by preparers of good rather than ill, repute, and that brings us to the poll at hand which seeks to canvass the membership of this Forum for their input regarding their preference in cuisine which, instead of listing the diverse gastronomic delights that are widely available for consumption in Trinidad, has been whittled down to two types of foods, namely "Creole" and "Indian" which, as everyone knows, do not exist in Trinidad because there is no such being as a "Creole" nor an "Indian" native to Trinidad, although the original inhabitants of the island were considered to be "Indian" by European interlopers who couldn't tell a Carib from an Arawak nor could they tell a Mayan from an Aztec, so they chose to, in their ignorance, lump all peoples that did not share their lack of melanin and gold or red coloured hair and non-brown eyes, into a single group, and this has been passed down for centuries which brings us to the current dilemma of "Creole" and "Indian" foods and which one is preferred via a poll which again raises the argument of what is "Creole" food and what is "Indian" food, so until these foods are defined unequivocally, it will be futile to gauge the preference of one over the other, and even if this unequivocal definition were stated, there would arise a great debate about the definition itself which will again return us to the premiere argument of what is "Creole" food, and who are "Creoles" and what is "Indian" food and who are "Indians" as these terms pertain to the island of Trinidad.

And this post deals directly with the culinary aspects of this Thread. I'm certain that the majority of readers will comprehend what has been written whereas some may not and choose to exercise their privilege of deleting the post.

lol Some time ago, I was telling someone that I was kind of fed up of roti but then the other day I was invited by someone who made a delicious paratha, pumpkin and bodi roti that I just couldn't resist! I am not into Indian sweets, my kids love them but I don't. But again, I am not a fan of sweets in general. I find I get fed up easier with curry dishes than creole dishes. For instance: I cannot eat curry every day but I could surely eat a bowl of cow heel soup every single day without ever complaining! lol YUM!

i dunno spies...maybe fusion?
it's made in the 'stew' kinda way- the creole influence
but indians have pulao, which is a similar mixed rice dish, jus not stewed

so maybe the name came from india but the recipe is west african?

I haven't had it for some years and my kid was dropping hints. He was surprised when he saw it. The bad part is that he took most of it home. My next project is to make a brick "chulha" in the back yard to make some pot bake.

It is a little more than chow meat. This bowl had 7 limes, chicken stock, corriander, onions, cucumber, green chives, salt, sugar, pepper and blackpepper.

OK, here it is.

4 Pig Feet
7 Limes
1 Large Onion
1 Celantro Plant (Sprig?) (or substitute 3 to 4 leaves of Shandon/Shadow Bene)
1 or 2 Cucumber(s)
1 tin Chicken stock
Salt
Sugar
Pepper
Black Pepper

Optional: Chives or green onion (1/3 cup) as I have lots of it in the garden.
Garlic. I left out the garlic as I find it is a little over powering but add a grain or 2 you may like it.

Boil the pig foot for about 1¼ Hr on a low to medium heat. (Optional: I used some Thyme from my garden.) If you are good in estimating pressure cooker time go ahead it takes about 15 minutes. Note that pressure cooking is very unforgiving and the slightest off time can make it too soft. Test it with a fork to see that it is soft but still firm holding to the bone. Dump the hot water and cool it changing the water at least once and then add ice cold water to set the meat. Drain it. It now has a texture of hard jello. If it is over cooked it will fall off the bones.

For this one I started with the juice of 4 limes and ended up with 7.
Cut and add onions, Cukes, Chopped Celantro and Pepper.
Add 1 can chicken stock. (if you prefer bring to a boil and let cool)
Add the Salt, Sugar and Black Pepper to taste.
Soak for at least 4 hours but overnight is better.

I have never tried to make Chicken Feet Souse even though I had it at a street corner in Tobago. I may try it one day.

I hate breakfast shed food. That does go right in yr stomach and then weigh you down. I ate it twice and both times I hated it including the flies that zoom over the plate.

Ok Salts.

I don’t have a recipe but this is what I did.

Lobster Pelau

3 Medium Lobsters
6 Salted Pig Tails
1½ lb Smoked Ham
4 Tins Green Pigeon Peas
½ Tin Coconut Milk (put the whole tin if you like a more coconut flavor)
2 Large Onions
1 Cup Chives
1 Large head Garlic
1 Teaspoon sugar
1 Tin Chicken Stock.
1 Cup Chopped Celantro
1 Medium Tin crushed Tomatoes
1/3 Cup Tomato Ketchup
8 (4 to 5 inches) Stems of Thyme
1 full pot spoon sugar for browning
Cooking Oil
3 ounces of butter
Black Pepper
1 Pepper


Cut up and soak pigtails to get out almost all of the salt.
Cut up ham in 1 inch cubes.
Cut up lobsters.

Heat oil and add the pot spoon of sugar to get browning.
After sugar is black and smoky, add chopped garlic and sautee for 1 minute.
Add chopped onions and sautee for another minute or so.
Add the pig tail and cook in low to medium heat for about 40 minutes.

You cannot cook this volume in a regular pot. It will burn. I use a roasting pan to cook the Pelau.
Put in the washed rice and mix in the remaining ingredients. Drain away Peas water.
The consistency should be a wet paste/slurry. Taste the mixture for salt and add if needed. Not enough water and the rice is still hard or too much it would be sappy. Bake for 25 minutes at 350 and another hour at 250 degrees. Check the center to see if it has dried up or needs more cooking.

Lex i made this yesterday. it took me 6 hrs with all the preparations I had to do. I made some changes...I added shrimp, bell peppers and carrots. it was delish. I will post a pic later. Thks for the recipe.

Glad you did it. This is a favourite for my Christmas get together.
