With brag, sapodilla, Satya, Mivo, Dim and all relevant others around, I thought I might give this thread a spin on this forum.
I was intrigued to know that while we call our veg side dishes chokha, people in north India say sabjhe. It was equally interesting to learn that chokha was their term for what I knew as chunkay. There was no chunkay in the lady's vocabulary. I have spoken to many north Indians but this lady was the first one to have so many terms in common with me. For instance, baigan, carella, etc. Wasn't from modern day UP, but close to Delhi which was part of the larger UP state pre 60s/70s.
Good stuff!
(She didn't know what chataignier was though!! :P )
Falcon Chunkay and Choka is different:
Chunkay is the preparation before you cook your vege or meats: ie curry or stew
chokha is when you roast the veges ie: tomatoes, baigan on top your stove or grill, aloo chokha is made with boil aloo
ah wonder if they know the chataignier as katahar or jackfruit:?: :?:
but yuh does chunkay the choka.. ;)

Okay Falcon........I too have been literally learning from my Northern Indian posse.
Subzie "sabjhe" is vegetables.
Choka is Bhoujpouri I believe, which is a different language altogether, but to the Northern Indians 'choka' is really 'BATURA.'
'Chunkay' is really to fry or saute.... again this is bhoj land language... a part of Uttar Pradesh or Upper Country / State
I have been to Native Northern Indians kitchen, dined with them and have found many many similarities with our foods in Trinidad. For example, corn roti , sada roti, kaloungie, sweet rice, achar, our buss up shut paratha, gulabjamoon, halwa - many varies, goat foot soup and many more, just like my mother's and grand mother's cooking. I have also dined with some Bengali folks and their dhal, rice and curried fish seemed like it came straight out of a Trinidad kitchen. Also , I noticed that just like my family, they too did not cook with too much pepper, that was served on the side.
Sap understands it the same way I do.

Chokha ..is 'chokha' in Bihar ....any person from Bihar can tell you that cus they also make "chokha" , both are make the same way , chokha made in Trinidad and Bihar both taste the same
Tarkari is any vegetable side dish , which is the same as "subjie"
Chunkay is sometimes called "chonknaa" in Bhojpuri which is the same is "tadka" in Hindi
Tarkari = talkari = subjie = vegetable side dish
chunkay = chonknaa= tadka=tarka

Well, this time wasn't mango season but earlier in the year when I was there, it was. Dem people have all kinda mango and the trees laden fuh so. Dey doh even eat dem. One day ah went drivin about and ah see about 5 mango tree in a fella yard. Ah stop, ring he doorbell, and ask him if ah cud buy some mango. He start to laff, get me ah big shopping bag, and tell me to take all ah want for free. Ah pick ripe ones, haff ripe ones an green ones so ah would have mango all week at meh hotel.
At my hotel, I called he kitchen and had them send up some salt, garlic, onion, cilantro and a knife and big bowl. Ah drove dong to de local market and find congo pepper. Ah come back to meh room and make ah big bowl ah mango chow. Den ah call the bell boy and the cook who sent up the ingredients and gave them ah taste. Dey start to eat like mard but when the congo pepper hit dem, dey start tuh bawl for water. Great fun.
Chataigne is the french for chestnut.
